You can jailbreak iPod Touch 2G 2.2.1 now. The iPhone Dev Team has come out with an exploit that allows you to fully untether your iPod Touch 2G. The QuickPWN/PwnageTool software isn't out yet but Dev-Team has said they will release it in their next update.

There is a temporary download called QuickFreedom that you can download to jailbreak iPod Touch 2G. It's unofficially released by Dan and it only works with Windows for now.

Use 'Quick Freedom' it really works for the iTouch 2G 2.2.1. I tried it today. Just download the 2.2.1 ipsw file and open up 'Quick Freedom, browse for the file and just follow the instructions. There is an added bonus that you keep the original Apple logo on start up instead of a Pineapple.
